To make this easy sweet potato boat, wash and soak the sweet potatoes in lukewarm water, then rinse it off through cold water.
Next, cut the sweet potatoes and using a spoon scoop out sweet potatoes and create a cavity. Take the sweet potato extracts in a bowl, add in crumbled cottage cheese, blanched broccoli, and chickpeas mix them well.
Then add in chopped coriander leaves, pepper, red chilies and 1 tbsp olive oil. Toss it up well. Place the mixture in the cavity and air fry/bake for 20-25 minutes at 180 degree celsius. Enjoy.
